Okay long title I know but trust me it will all make sense real soon as you read this Blog entry.  Just a warning this is going to be a long post so I would suggest getting a nice cold drink and making up a vege and/or fruit platter and sitting back and just relaxing.

Firstly a huge Belated Merry Christmas to everyone that read’s my blog and their families!  I can’t believe that it is already New Year’s Eve!  Christmas Day seemed to go so fast.  On Dec 23rd Richard and David drove down to Katikati to pick up my mum and dad!  This was their first Christmas away from Katikati since they retired down there 11 years ago.  David just loved having his Nanny & Poppa staying with us!  It was great to see how well and how much bonding went on between David and my Dad.  Their favourite game was Dad would go down stairs off the deck and David would throw all his balls down to Dad and he would throw them back.  They did this for hours.  It is great seeing my dad get around.  When Richard first met him he was having to get around with 2 walking sticks and now he only very occasionally needs the stick and plays on the ground with David and runs after him which is something i never dreamed he would do again.  I will fill you in more on Dad if you are interested in future posts of what was actually wrong!

We had a lovely relaxing Christmas Day.  Pancakes and Bacon for breakfast and then I made a Christmas lunch which we had about 2pm.  After that we loaded our very full selves into the car and drove out to Maratei but the back way and OMG the amount of people we saw collecting shellfish!  Then it was home for Pavlova and Ice Cream and a very quiet night.  Boxing Day Morning was spent going back to the old neighbour hood that i grew up in!  The house I grew up in we could see from our neigbour’s house that we were visiting and wow what a change.  Put it this way.  I grew up in Grey Lynn in the 70’s and 80’s and it supposdly wasn’t the place to live.  Now it is just like Ponsonby and in the 11 years since Mum and Dad sold the house if they were to sell it in the condition it was 11 years ago they would easily get at least 3 1/2 times more.  So I hate to think how much it is worth now that it is all done up!  We then quickly braved Botany which I regretted afterwards and then home.  Mum and Dad left on Thursday afternoon.

We had a quiet Friday and then Saturday morning after Breakfast headed down to have a belated Christmas with Richard’s family!  Weather wasn’t looking the best going down but wow it definatly heated up and I got a sunburned arm on the way home. 

Yesterday we started our journey up to Whangarei at about 7.45 with a drive thru breakfast stop at Greenlane for Mc Donalds.  We were heading up to Whangarei to meet Janine (Mummymoo) and her wonderful family for the day!  It was soo awesome to finally meet in person.  Our local paper had suggested over the holiday period if we were heading north of Welsford to go SH16 which for those not in Auckland is via the Nth Western Motorway and then out West and through Kumeu, Helensville and sorry in advance for the spelling Kawkopakopa!  What a beautiful way and it was soo quiet and hardly any one on the road.  Quickly stopped at Welsford for a Play and Sunscreen break and then it was Northbound.  After picking up some fruit and chesese to make a fruit platter (Thanks Hannah for the inspiration) we found our way to Janine’s.  Janine it was sooo great to finally meet you in person.  You have a wonderful son and husband.  It was great to see Ethan and David playing together!  Janine’s husband made us yummy blueberry pancakes and bacon for lunch.  Thanks Carl they were yummy!  Then it was off to the beach!  Sorry Janine must get the name off you as I have totally forgotten it!  Well, put it this way the moment my water baby saw the beach and water he was off with Daddy running after him.  It was a very very hot day but the water was cold but David didn’t seem to care at all about the cold.  Richard had to keep bringing him in and then the huge tantrum started when he was brought up to me becuase he was just shaking so much.  Janine said she didn’t know such a little body could shake so much!  Well while Daddy raced to get his change of clothes I am struggling to dry him and get his wet togs and long togs top off him while he is strugglying to run back down to the water again. Well we finally got him dressed and had to put him the pram to stop him launching himself into the sea to play again.  Well, normally i would just let a tantrum ride out if he was safe and fine but it was just mean having him sit in the pram and seeing the beach and water so it was quicly back to the car and back to Janine’s with an ice block/ice cream pick up on the way back.  Okay Drama # 1 for the day done and dusted!  He was perfectly happy back in the car especially after a lemonade ice block.

Get back to Janine’s and i start getting stuff to get changed into out of the boot and thought David was well away from the car so shut the boot and turned around to find my little boy’s finger tips stuck in the boots door!!!  I felt like the worst mother in the world and everyone can testify to the fact that all i could mutter was keys, keys, keys….Richard quickly opened the boot, i scooped him up and janine and i went and got frozen veges and a big hug for David.  At the start there were just slight little dents and then they disapeared and then some arnica latter and he jumped off my lap and started playing.  With no damage that we could see to his fingers, using them fine, bending etc and no bruising and colour loss!  Just mummy breathing fast and trying to stop freaking out.  I kept thinking of a recent blog post from Evana talking about her son who is younger than david getting his fingers jamed in a door inside their house!  Thankfully nothing like that!  So that explains the ending of the title and Drama # 2

After a nice shower, clean clothes and relaxing chatting to Janine and Carl, I could easly have stayed there for hours we headed home.  The traffic wasn’t looking bad so we decided to brave Orewa.  Well the snail of traffic started just as we were going past the new Johnstone’s Tunnels and continued to the outskirts of Orewa!  We were moving which was a bonus.  We ended up grabing dinner on the way home and eating it in the car as we drove home and then home, David had a play, bath and then off to bed for Everyone.  Once we were home and relaxing we confirmed what the 3rd Drama for the day was and that was a majorly sunburned back for me….I had only been sitting in my dress on the beach for about half an hour and thought i was under the umbrealla.  It is all okay now still red but keep putting after sun on it and it will be okay.

Hee hee strange title I know but these are 2 things that my day has and is going to consist of.  This morning Richard, David and I headed down to David’s daycare for a little visit and play!  I think David was a little overwhelmed with all the kids and all the different toys.  Understandably he clung to me a bit but then sat with some of the kids and started to do a picture and then took off playing and playing.  He is a total outdoors boy as he kept gazing out their gate looking at the older kids playing outside!  We were shown around the whole place and David had no problem with us not being in the same room!  We atempted to get him to eat lunch with the other kids but he wasn’t interested in the food at all!  Just a little overwhelmed I think!  We are back there on Friday for a play and for him to get used to the place some more.

The Mexican Food?  Well tonight Richard and I are off out to his Christmas Party at the Mexican Cafe so should be a great time.  Mmm thinking i might have to have an ice cold magarita!

Morning Everyone!

Well the boys are asleep so I thought I would quickly jump on and put this amazing Roast Lamb Recipie on for everyone!

Roast Leg of Lamb with Honey, Mint & Lemon Glaze

1 Leg Lamb

2 Tbs Olive Oil

2 Tbs chopped mint

4 -6 cloves garlic, crushed

1 tsp salt

freshly ground black pepper


1 Tbs Honey

2 Tbs chopped mint, extra

2 Tbs lemon juice

2 Tbs quince or apricot paste/ thick jam

Pierce the meat all over with a sharp knife.  Combine the olive oil, mint, garlic, salt and pepper.  Spoon the mixture over the meat and rub in.  Cover and refridgerate for at least 1 hour or up to 3 hours.

To Prepare the glaze, combine honey, mint, lemon juice and jam/paste in a small saucepan.  Bring to the boil, stiring.  Remove from the heat and set aside.  Preheat the oven to 180C. Place the lamb in an oven dish lined with baking paper, cover lightly with foil and roast for 1 hour.  Remove the foil and continue to roast for a further 45 mins or until it is cooked to your liking.  Baste frequently.

Brush half the glaze over the lamb and cook for a further 10 mins.  Baste Frequently.  Remove from the oven, cover with foil and rest for 10 mins before calving.  Spoon the extra glaze over the sliced lamb.

Going to be a busy day here today as richard is kindly helping me cut out 2 alphabets from the cricut then him and david are picking up santa photos and other photos printed (before we decided on printer), i have 2 ABC books to put together, 2 callanders to work on, find an ellusive mdf zebra that david has hidden from me and i need to put onto a client’s alterted MDF letters before I can send to her.  Write out more Xmas cards and then send out a few RAKS.

Firstly sorry about my lack of recipie posting – I have all the recipies here to blog but keep getting caught up and distracted in other things.  I will start of with 2 recipies then blog and more recipies and blog update tomorrow!

I love this one.

Lemon & Pistachio Slice

395g can condenced milk

250g butter, cubed

zest of 1 lemon, finaly grated

2 x 250 g pakets round wine biscuts finely crushed

2 x 70g pks pistachios lightly toasted.


2 cups icing sugar

30g butter, softened

juice of 1 lemon

warm water, to mix.

Line 18 x 28 baking pan with baking paper.  Heat the condenced milk and butter in a saucepan, stirring until the butter is melted.  Add the lemon zest and set aside to cool a little.

In a large bowl, combine the crushed biscuts and roughly chopped postachios (reserve a handful for sprinkling on top), make a well.  Pour the liquid into the dry ingredients and mix together until combined.  Spoon into the prepared pan and smooth top with the back of a spoon. Refridgerate for 20 mins.

To make the icing, place the icing sugar, butter and lemon juice in a bowl.  Use a little warm water to mix to a smooth consistency.  Spread onto the base.  Sprinkle with reserved postachios and refridgerate until set.  Makes 28 squares.

Summer Pudding

10 slices med white bread

600g mixed summer fruits (I use a mix of frozen rasberries, mixed berries and strawberries)

1 cup sugar

1 1/2 cups orange juice

Greek yoghurt and mint spriggs to serve.

Line the base of a 1 litre pudding basin or loaf pan with glad wrap.  Remove crusts from the bread and use 3/4 of the bread to line the base and sides of the pan.

Place the fruits in a large non – stick pan and heat gently until they are softened.  Add the sugar and heat gently for 5 minutes until all the fruit is softened and the sugar is dissolved.  Stir in the orange juice.

Transfer the fruit to the lined basin, reservinga little juice.  The fruit should reach the top of the bread lining.  Cover with the remaining bread to seal in the fruit.  Place a dish or can on top of the bread to give a snug fit.  Top with a weight or a can.

Leave in the fridge for at least 4 hours so that the juices seep through the colour of the bread.  Turn out the pudding and spoon over the reserved juice to cover any bread left unstained.  Serve with fresh berries, sprig of fresh mint and Greek Yoghurt.

Hee hee can you all tell that I have a horrible sweet tooth.

Thank you all for your comments about David’s word.  We are so proud and so is he.  The appointment we had 2 few weeks ago was actually just a meeting and a question session and we are now on the waiting list to get a assement session with a speech threapist to actually see just where he is.

We went out to Harvey Norman’s today and somehow managed to get David’s first photo with Santa.  Was a bit nervous at the start.  We have purchased their $20 package and picking up after lunch tomorrow sometime.  We have also been saving up for a Colour Printer/Photo Printer and scanner and they had a great one on sale at Harvey Norman’s today so yay I will be able to print my own photos, print coloured journalling now and scan things.  I will have a first go at scanning the Santa Photos when we pick them up tomorrow.

We have a new word!

Over the last few weeks when ever David sees a ball especially when out at places like K-Mart etc where there are heaps of them we kept getting bbb bbb and then over the weekend his new wiggles board book has balls in it and we got bball bball (bit hard to type how he says it) but it is def ball!  Yay way to go little man, mummy and daddy are so proud of you!

Thank you all for your comments re his bath.  He loves water still so think it is the bath.  We may have made some progress last night but fingers crossed it continues tonight and then I can tell you about it!

Wow, I can’t believe that it is 2 weeks today until Christmas!  We think that we have figured out our very last present which we have to get which is for the FIL – which reminds me I must get Richard to get it today!  They have an acre with lots of vege gardens and lots of and i mean lots of fruit trees so it is a long handle with a basket etc on the end of it to get the fruit.  We are going to get one as well as our Plum tree has gone manic and has sooooo many plums on it and that is just the first lot.  The previous owners said that most years they got yellow fleshed plums first and then red ones but last year it was mostly red fleshed plums!!!!MMMm my favourite.  So if any of you have any amazing plum jam or plum sauce recpies please feel free to send them our way!  We have 2 apple trees but the large one outside my scrap room had major hail damage and looks like we have lost all the fruit but the other smalle apple tree has tiny little apples on it at the moment and looks great.  I can also see new blossom on it as well!

1. Wrapping paper or gift bags? Normally just wrapping paper but I do have some Gift bags for specific presents this year.

2. Real tree or artificial? I would love a Real tree but get cronic hayfever so unfortunatly a no go so artifical all the way..
3. When do you put up the tree? Usually around 01st December.  It was on the morning of the 2nd this year.

4. When do you take the tree down? Normally when we get around to it but probably like last year sometime before or on New Years.

6. Favorite gift received as a child? The most fav gift that I can remember was when i was really into art and drawing when i was about 10 and getting new felttips and a drawing book.

7. Do you have a Nativity scene? Nope but would love to get one.

14 Days until Christmas!

Wow, I just can’t believe that it is only 14 days until Christmas!  Wow, it is going to be a busy few weeks.  I have 3 orders to get to clients by 20th December but even though it is going to be frantic to get it all busy but I am just loving it as 2 of the projects are OTP and I am loving it.  I will ask permission from the clients and will post pics of everything next week or when i finish them!  I am doing 3 Callanders for Richard’s office manager, Alterted MDF letters for one client for her 8 month old for Christmas and 2 ABC albums for another client for her 2 daughter’s for Christmas!  Today is going to be list and planning day for the next 2 weeks!

Sorry for the lack of recipies but def going to post today! Saturday morning we headed down to Wellington for Richard’s best friend’s birthday party!  Flew down, drove up to Upper Hutt to our Motel and then down to Silverstream.  Richard had one task that afternoon and that was to take the birthday boy out for at least 1 1/2 hours so his eldest could do the most amazing surprize.  While the boys were out BJ and his friend Phil made up the idea that Jo his mum had got from a Christmas email she had received from a friend.  It was a Christmas Tree made with beer bottles (they used Stellar) with round glass inbetween the layers.  Looked amazing and just waiting on a photo and will post then.  Looked truley amazing especially when it went dark and we had a red light under the table.  David was the youngest by 4 years there and we thought he would fall asleep in his pram in the lounge with the tv on but no this boy was fighting going to sleep big time so by the time we got back to the motel the poor thing had been awake from 7.00am until 10.30pm with an hours nap in the middle.  Well into pj’s and then bottle and off to bed.  He just didn’t want to go to sleep and knew he wouldn’t even if we put him down in one of the rooms on the bed…he is a party animal and hates to miss a good party!  Well awake the next morning and then back to Jo and Derek’s for a BBQ Breakfast brunch and just before we left the older 11 year old girls took him up to the tramp.  Tammy was sitting in the middle and david would just run around and around the tramp mat with someone watching incase he fell…Well, poor thing became overheated and then into the car and after a bottle fell asleep for a good hour even with stopping at Kiwiscraps to get a few supplies for me and woke up for about 2-3 mins on the way through town and then back alseep and didn’t wake up until we had half the car unpacked!

Well, home now and today going to try and catch up with stuff, off out at lunch to do the grocery shopping!  Will try and get some Christmas Baking done today.

Well, thing I need to pick the brain’s of the mummy’s out there.  Up until last Thursday David just loved, loved having a bath.  This was a thing that since he was about 6 months old or so has been just him and Daddy time and I pop in once during the bath to have a little play etc.  Well last thursday night Richard was at a Work dinner/meeting and i went to give him a bath after dinner and OMG you could see how scared he was.  I wanted him to get used to me giving him a bath and now he screams and cries when even Daddy goes to give him a bath he cries and screams.  He has let him give him a couple of quick showers.  Last night I mentioned bath after dinner and he started to cry so I went and hopped into the bath and played with his toys but he didn’t really want to come in at all.  He doesn’t seem to mind the room it is just the bath.  I know it was probably totally out of routine for him for me to give him a bath and richard was wondering if the water was too warm but it was even before he got into the bath.  Any suggestions would be great!  I hate seeing him like this.  He naturally loves water and away from the bath is fine!

all for all your wonderful support and comments!

Well 9.30 this morning came along and David and I greeted the lady that would be doing the assement at the door and David took an imediate shine to her which was good.  She ended up sitting on the floor with david and was just watching David and mostly asking us questions for an hour.  She has said that physcially etc he is doing really well and a very friendly boy.  They are keeping his case open and we will be working with a Speech Threapist and an EIT (Early Intervention teacher) here at home and when he starts day care which she thinks will really help him alot.  I said that were waiting for the new day care to open and had enrolled him for 2 days a week and she said straight off she didn’t think it would be long enough for him so we are going to do 3 days a week all day when it opens.  She is sending us along stratigies and ideas of things to do in the meantime.  At the moment we don’t think he has a hearing problem.  Will see how things go.  The EIT is going to play based therapy with him and work out just where he is at.  Today was more an Assment day!  I have mixed feelings about this morning. I am really happy that we are onto thigns and that but was just hard to get her to give her personal opionon.  I would ask her a question and she would start by saying “From what you are saying” but hey we will get there.  She thought David was wonderful!  They are going to work with him on learning body parts, and different animals just to name a few.

After she left I rung the day care to see if they had a more definative date as to when the new centre would be opening and she said unfortunatly with christmas/new year they can’t get people to work so it won’t be until feb/march as they have to get the Ministry of Education to come in and access the new place.  So I took a stand and asked if they had any places at the current centre in the under 2’s room.  Well after some discussion and a telephone call back they have offered us a full time position from 07th Jan or part time mon, thus, fri from 07th Jan.  The full time position is held by a child that is leaving the room 21 Dec but she said she thought it would be nice for David to have Christmas/New Year and a chance to go away before he started.  We are really thinking of the 3 days for now but just need to double check figures and work out things with Richard but will have a decision made by tomorrow!

Hopefully fingers crossed off to Coffee Group in Puni tomorrow which will be great for David and then he is at Cheryl’s for the afternoon.

Christmas Recipies Day 2-

Thank you to everyone for your comments about yesterday’s recpies.  So glad that everyone liked the sound of the spicy nuts.  Also thank you all for your well wishes on David’s accessment on Thursday.  Once we know the outcome I will let all of you know.  It is great to have so much support!

Today’s recepie is an adaptation of one called Kiwi Crisps which is a chocolate chip cookie made with condensend milk.  I make an adapattion of this with cocoa in it and 2 different kinds of chocolate chips in it.  This year i have decided to adapted it even more and have people waiting in the wings for their special boxes of these.

Chocolate Dipped Chocolate Overload

4 Tbs Sugar

350g Flour – less 2 Tablespoons

4 Tablespoons Chocolate Condensend Milk

250g Butter

2 Tsp Baking Power

2 Tbs Cocoa

Dark, milk and white chocolate chips or drops

Cream butter and sugar then mix in condensend milk.  Add other ingredients except chocolate.  Once combined mix in chocolate chips.  Roll into balls, size is dependent on you and then flatten.  I cook in a Fan bake oven at 150C for 12 minutes.  Leave on tray for 2-3 mins then put onto cooling rack.  We found with the chocolate condenced milk they aren’t as firm as normal but that is fine.

Once completly cool, melt chocolate of your choice and dip half the cookie into the chocolate and set on baking paper.


Well, must be off – my hayfever is playing up something cronic at the moment so it is just so draining on me at the moment.  David has just gone to his babysitters and i am going to take 30 mins to myself and curl up on the sofa with an ice cold drink!

Firstly before I launch into the Christmas Recipie today which I guarantee is very yummy indeed.  I just want to say a Huge thank you to everyone for your comments and support regarding David’s lack of speech etc.  We received a letter from the Super Clinic in Manukau to say that he has been given a Priority 2 (thinking that 4 must be the highest) as the waiting list is at leas 22 weeks.  Wow 5 1/2 months long. Though we don’t think there is much wrong with his hearing we are going to take Hannah’s suggestion and take him along to the Radiolgy place in Remuera Road.  Then on Friday we get a letter from the Ministry of Education Special Unit to say that David was discussed at their new assement meeting the day before and that he will def get accessed as soon as they can but as the waiting list is so long it won’t be at all possible for it to be this year but were we willing to go on the list for last min cancellations.  We are fine with this but I hadn’t gotten around to ringing to say that this would be fine and then yesterday afternoon I get a telephone call from them.  They are going to come and see us on December 06th at 9.30am.  Wow and they also prefer to access in a familar enviorment so they will be coming to our house which is great.  I will let you know the outcome of that accessment next week!

Now I have cornered Richard down and for Christmas desert we are going to have a old fashioned boiled pudding with brandy cream and a Pavlova!  As my dad will be here we have to be careful what we serve up as he has a bowel condition and can’t eat certain foods.  But Pavolva will be fine for him, just not much cream at all!

Today i am going to share 2 recipies with you all.  One being something that you can use as a gift (will be sharing lots of these) or put in a gift basket or for just having around over Christmas and the other is something that I am going to surprise my mum with that she has said over the years that she has always wanted to try.

Spicy Nuts

2 tablespoons Olive Oil

1/2 teaspoon ground cumin, coriander and garlic powder

1/4 teaspoon chilli powder, ground ginger and cinamon

2/3 cup pecans

2/3 cup raw cashews

1 1/2 cups raw almonds

Preheat oven to slow 150C.  Heat the oil over low heat in a pan and stir in spics for 2 mins or until fragrants.  Remove from the heat, add the nuts and stir with a wooden spoon until the nuts are well coated.  Spread over a baking tray and bake for 15 mins or until golden.  Sprinkle with salt and cool.

White Christmas – My mum always said she would like to try.  Have heard this is great.

1 1/2 cups rice bubbles

1 cup milk powder

1 cup icing sugar

1 cup descicated coconut

1/3 cup chopped red glace cherries

1/3 cup chopped green glace cherries

1/3 cup saltanas

250g Kremalta

Line a shallow 28 x 18 (11×7 inch) tin with foil.  Put the rice bubbles, milk powder, icing sugar, coconut, glace cherries and sultantas in a large bowl and stir. Make a well in the centre.  Melt the Kremalta over low heat, cool slightly, then add to the well in the rice bubble mixture.  Stir with a wooden spoon until all the ingredients are moistened.

Spoon into the tin and smooth down the surface.  Refridgerate for 30 mins, or until completly set.  Remove from the tin and discard the foil.  Cut into small triangles to serve.
